Niki's TJ Stir Fry - Steamer Required (All Ingredients Trader Joes), Serves 4
If you've purchased slow cook rice, allow 30 - 45 minutes to cook rice (follow package instructions) then begin vegetable and tempeh prep, if it is pre-cooked start all at the same time. Chop bell pepper, onion, mushrooms, celery, and garlic then add to steamer for 5 minutes. Fry the tempeh strips with a TBLS of grapeseed oil in large skillet pan (you will use it to combine all ingedients) for 15 minutes turning frequently over medium heat. Combine the drained rice, veggies, and tempeh into large pan, add bean sprouts, curry, and Braggs heat for 3 minutes and serve.
Lionel's Vegan Popcorn, Serves 4 - 6
Combine oil and popcorn in large pot with lid, put on medium heat, give it a shake to blend kernals evenly with the oil, let pop until you hear 5 seconds between pops. Melt Earth Balance. Add the popped corn to your favorite serving bowl, pour the melted Earth Balance over the top, add two pinches of season salt, and sea salt to taste. Blend and enjoy this delicious healthy snack!
